Ingredients

    4 eggs
    1 cup milk
    1 cup chopped sweet peppers
    .5 cups chopped celery
    1 medium tomato
    1 cup grated Cheddar Cheese
    .5 tsp salt
    dash pepper

Directions

Preheat oven to 325F. Beat eggs, add milk and blend well. Heat an ovenproof cast iron skillet to medium. Coat pan with melted butter and saut´┐Ż vegetables. Add eggs and milk. Arrange tomato slices then cheddar on top.
Place pan in oven and bake for about 15 minutes, until cheese is melted and eggs are set. Serve immediately.
