Introduction

This is a luxurious satay that is definitely for special occasions. I manage to eat this and still stick to my daily calories but if you want to slim it down further, follow the "Tips" if you want to slim it way down and add in some major veggie portions! This is a luxurious satay that is definitely for special occasions. Ingredients

    1/2 tsp Cayenne Pepper
    1 teaspoon Sesame oil
    2 tbsp Fish Sauce
    2 cloves garlic
    0.5 cup coconut milk
    2 tsp dark Soy Sauce
    1 cup dry roasted peanuts (not salted)
    2 tbsp brown sugar
    0.5 tsp Tamarind Paste
    0.5 cup water or as needed for desired consistency
    1 Chilli Pepper, chopped, deseeded if you prefer it hotter.
    2 chicken breasts
    1 cup water

Tips

This can also be used as a dipping sauce for the bite sized bits of chicken and served with chinese stir fried vegetables on the side. In that case, follow step one only, then warm through the sauce and track as 0.5 portions of the satay. This will also include the chicken and serves 4 people.

Directions

1. Place the nuts, cayenne pepper, sesame oil, fish sauce, garlic, coconut milk, soy sauce, brown sugar, tamarind paste and water in a blender or food processer. Blend until smooth.

2. Chop the chicken into bite size chunks and dry fry it (with a little spray oil to coat the pan) until cooked through. Add in any vegetables you wish (not in the food tracker) until they are also cooked through.

3. Cover the chicken and vegetables in the sauce and warm through until bubbling.

Serve with rice or noodles.
