Number of Servings: 1

Ingredients

    2 C cauliflower, cut into chunks
    .5 oz cream cheese
    .5 oz shredded cheddar cheese
    4 seasoned croutons (optional)
    Any seasoning - try garlic salt, bbq, or taco! or just add pinch of salt

Tips

Use light cheese options for less fat.


Directions


Place the cauliflower in a microwave safe bowl. Cook for about 2 minutes, until cauliflower is at desired doneness. Place cream and cheddar cheeses in small bowl and nuke for about 15 seconds, just enough to melt but not burn cheese. Stir seasonings into cheese, then add cheese to cauliflower and toss well, mashing the cauliflower a bit with your spoon. If desired, crunch up croutons over the top for a tasty texture!

Serving Size: Makes 1 2 cup serving
