Apple Crumb Muffins

Ingredients

    Batter:
    2 c. flour
    1/4 c. sugar
    1 T. baking powder
    1 teaspoon apple spice

    1/4 c. flour
    2 T plus 1 teaspoon sugar
    1 c. skim milk
    1 small apple cored, pared and shreddded
    1/4 c. butter melted
    1 egg

    Crumb Topping:
    2 T. butter
    1/8 teaspoon cinnamon

Tips

Muffins freeze well so they can be prepared in advance and kept for future use:
Thaw at room temperture.


Directions

Batter:
1. Line 12 muffin cups with baking liners and set aside.
2. Preheat oven to 400 degrees.
3. In mixing bowl combine first 4 ingredients.
4. In another bowl combine milk, apple, margarine and egg.
5. Pour into dry ingredients and stir until combined (do not beat or overmix batter should be lumpy)
6. Fill each baking cup with equal amount of batter (each will be about 2/3 full).

Topping:
1. In small bowl combine all ingredients for topping, stirring until thoroughly combined.
2. Sprinkle an equal amount of topping over each muffin.
3. Bake for 15 to 20 minutes or until muffins are brown and a toothpick inserted in center comes out dry.
4. Remove muffins to wire rack and let cool.
