stuffed acorn squash

Ingredients

    1 acorn squash
    1.5 cup cooked lentils
    2 whole mushrooms....cooked
    1/2 cup cooked zucchini
    1/2 cup cooked baby carrots
    1/4 c parmesan cheese
    sprinkle with 1 T pine nuts on each acorn

Directions

cut acorn squash in half and spoon out seeds. lay in a 13x9 pan with 2 cups of water in bottom...put acorn squash face down and bake at 400 degrees for 20-30 mins til soft. Meanwhile cook red lentils (I use dry) in water add garlic, zucchini, baby carrots, mushrooms, and any seasonings you would like. Take water out of pan (be careful very hot) and spoon lentil mixture into both acorn squash and sprinkle with parmesan cheese and pine nuts,put in oven at 350 uncovered til bubbly Enjoy!
