Grandma's Beefaroni - Vegan

Introduction

My grandma's recipe, as taught to me by mom, made vegan & whole grain! My grandma's recipe, as taught to me by mom, made vegan & whole grain!
Number of Servings: 9

Ingredients

    1/4C vegetable broth
    1 medium onion, chopped
    1 green pepper, chopped
    12oz vegan meat crumbles
    3 15oz cans diced tomatoes
    45oz water
    13.25oz dried whole wheat elbow macaroni
    2tsp basil
    2tsp oregano
    2tsp thyme
    1/4tsp garlic salt
    1/2C ketchup

Directions

Heat a pan over medium heat, add vegetable broth, onion, and green pepper, and cook until tender.

Add vegan crumbles, diced tomatoes, water, macaroni, spices, & ketchup. Bring to a boil, then reduce heat, cover & simmer until macaroni is cooked and water is absorbed. About 20 minutes.

Serving Size: Makes 9 2C servings
