Sweet peppers (bell), 1 large (2-1/4 per lb, approx 3-3/4"
*Brown Rice, long grain, 2 cup
*EVOO, .25 tbsp
Onions, raw, 1 medium (2-1/2" dia)
*Zuccini Squash, 1 cup
*Summer Squash, 1 cup, sliced
Garlic, 3 cloves
Red Ripe Tomatoes, 1 cup cherry tomatoes
Beans, black, 1 cup
Cilantro, raw, 6 tbsp
Lime Juice, .25 cup
Beef Stock .5 cup

Directions
precook the rice. Preheat oven to 350*. boil peppers to soften. Mix other ingredients. Drain peppers. stuff and bake in the center of the oven for 20 minutes.
Serve with quacomole.
