Vegan Breakfast Sausage

Number of Servings: 16


    1 cup whole wheat flour + 3 tablespoons
    2 cup rolled oats
    3 tablespoons milled flax
    1 teaspoon salt
    1 1/2 teaspoons black pepper
    2 teaspoons sage leaves
    2 teaspoons thyme leaves
    1/2 teaspoon rosemary leaves
    2 teaspoon splenda brown sugar
    1/2 teaspoon nutmeg
    1 teaspoon red pepper flakes
    2 cup smashed beans
    1/2 cup cooked quinoa

    1 cup hot water or vegetable broth
    1 Tablespoon oil
    4 teaspoon liquid aminos

    Cooking Spray


Add dry ingredients and quinoa to large bowl, mix well, in separate container mix oil, water, and aminos and heat until hot, slowly add wet ingredients to dry making sure to mix thoroughly. Adding extra flour 1 tablespoon at a time if needed.

Once well mixed, refridgerate for at least 1 hour.

Spray cookie sheet with cooking oil. Drop mixture by spoonfuls onto sheet and flatten into round patty. Lightly mist tops with cooking spray and put into a preheated 350 oven for 15 minutes or until browned. Serve immediately or freeze leftovers.
