Introduction

Thick, rich and without all the ingredients that make comforting Clam Chowder such an off-limits meal to savor. Add more veggies, even chicken If you want. For a nice presentation for less calories, sprinkle some chives and add croutons on top to replace bread! Easy to make!

Number of Servings: 8

Ingredients

    4 T Light Butter
    3/4 Medium Onion, diced
    2 Celery Stalks, Chopped
    1/2 Leek, sliced
    1/4 cup real bacon bits
    4 T Flour (I used wheat)
    1 lbs. Red Potatoes
    2 cups 98% Fat Free Chicken Broth
    3 cans chopped Clams or 2 cans chopped plus one can whole (in their juice)
    1 cup Regular Half and Half (fat free has corn syrup)
    1 Bay Leaf
    1/2 cup white wine
    1/2 cups instant mashed potatoes for thickening
    Touch of salt
    Red Pepper Flakes (optional)




Directions

Melt the butter in a large pot over medium heat. Add onions, celery and leeks until soften. Add bacon bits and flour. Stir until evenly distributed. Add chicken broth, juice from the clams, white wine, half and half, bay leaf, red pepper flakes and potatoes. Stir. Bring to a slight boil then lower heat to simmer 20 minutes or until potatoes are tender. Stir so ingredients doesn't stick to bottom.
Add instant mashed potatoes if soup needs thickening. Toss in clams and cook additional 1 minute and enjoy!

Serving Size: 6-8 servings
