Ingredients

1 cup fresh raspberries
1/4 cup Balsamic Vinegar
1/4 teaspoon Stevia
1/8 teaspoon coarse black pepper
4 ounces mixed salad/lettuce greens
4 ounces sugar snap peas, trimmed & blanched
6 ounces grilled chicken breast, cut into strips
2 ounces crumbled feta cheese
Tips
Directions
Cut chicken breast meat into strips, grill and set aside. Grilling take approximately 15 minutes.
In a blender combine 1/2 cup raspberries, balsamic vinegar, Stevia and black pepper. Puree. This is the dressing for your salad.
On two small salad plates, divide the greens and add sugar snap peas, feta cheese and strips of chicken. Drizzle with the raspberry dressing you just created and your salad is ready to enjoy!
