Turkey Kielbasa - 4 links Shrimp - 1/2 lb raw Green Peppers - apprx 1 cup chopped Tomatoes - 1 large or 1 canned no salt added Brown Rice - 1 cup cooked Olive Oil - 1 tbsp Garlic Clove - 1 or more depending on your preference Spices - Italian Seasoning, Pepper, Crushed Red Pepper, etc Water
In a pot, add water and boil. Add the 4 turkey kielbasa links and cook for 10 minutes. Drain and then chop the cooked kielbasa into 10 pieces for each link.Chop the green peppers and garlic clove(s). Cook the green peppers and garlic in a skillet with the oil on low. Add your desired spices. After the peppers have cooked for a while (stir while cooking), Add the cooked turkey kielbasa and tomatoes to the pan. Turn on your water for the rice, and cook the rice for 10 minutes (if 10 minute rice). Cook the turkey kielbasa, tomato, and green pepper mixture on low. Peel the shrimp and chop in half or in thirds. When the rice has 5 minutes left, add the raw shrimp to the kielbasa, pepper, tomato mix. Add 1/2 water to the mixture. Stir and cook until the shrimp is cooked - 3 to 4 minutes. Do not over cook the shrimp/mixture. Add the brown rice to the mixture and stir for a minute or two.
