    One package tabouli mix
    2 cups water
    1 medium cucumber, chopped
    1 c chopped scallions
    1 can tomatoes, drained (15 oz.)
    1/4 c (4 T) extra virgin olive oil
    1/2 c lemon juice


Directions

Prepare tabouli according to package. Refrigerate over night.

  • I make this a LOT, the only changes I make are fresh Roma Tomatoes instead of canned, 1 TBS black pepper and 1 TBS garlic salt. You can change it up to add any garden fresh veggies you love like squash, zucchini, peas etc, just adjust your nutritional values accordingly. - 3/19/08
