Salmon patties

Number of Servings: 1

Ingredients

    4 oz salmon - grind in food processor
    .5 T Onion - minced
    1/4 cup chopped zucchini
    .5 T light mayo
    4 saltine squares, crushed
    1 egg white
    red pepper flakes to taste

Directions

Mix together and form into 4 patties. Heat a non-stck pan to medium. (I use a 'green' pan that nothing sticks to.) Cook for 5 minutes on each side - trying to get a nice brown crust.

Serving Size: One serving of 4 patties
