This is one of my family's very favorite side dishes! It goes with just about everything, and is totally delicious, even for folks who aren't good about eating their vegetables! Ingredients

1 lb. frozen corn
3 oz. low-fat cream cheese (I use Neufchatel)
1 tbsp. salted butter
Salt, pepper, and red pepper flakes to taste
Tips
Adjust salt, pepper, and red pepper flakes to your taste. The creaminess of the corn mixes well with the heat of the red pepper!
Directions
Combine all ingredients in a pot. Cooking is done when corn is hot and cream cheese is thoroughly combined.
