margi's flax seed muffins

Number of Servings: 24

Ingredients

    1 1/2c. oatmeal, ground in blender or food processer
    1 T. baking powder
    1/2 tsp salt
    2c whole wheat flour
    1c flax seed, milled
    mix together. I put the raisins and the nuts in with this mixture.

    In food processor or blender, combine:
    2 washed and quartered oranges that you cut both ends off of.
    1 c brown sugar
    1 c milk plus 1 tsp vinegar to make buttermilk.
    1/2 c canola oil
    2 eggs
    1 tsp baking soda.

Tips

I use other dried fruits at times and other kinds of nuts as well. I have also used tangerines in place of the oranges. Not too bad with sunflower seeds. I love these. I hope you enjoy.


Directions

375 F for 25 minutes no matter the size of the muffin

Serving Size: 24 regular size muffins or 48 of the tiny muffins
