Enchanted Broccoli Forest Marinated Tofu

When I first found this recipe, the person sharing it said, "It's like candy ... I could eat the whole thing in one sitting." And I thought, "Riiiight." But you know what? It's like candy.

Give yourself at least 24 hours to make this, plus one hour to bake. It's best if left to marinade at least a day.

Ingredients

    1 block extra firm tofu, drained well
    2 tsp sesame oil
    2 TBSP tamari or soy
    2 TBSP unseasoned rice wine vinegar
    1/2 cup water
    2 garlic cloves, minced
    1-2 TBSP fresh ginger root, peeled and minced
    *2 tsp olive oil (for brushing the baking sheet)

Tips

Prep time is 20 minutes, but you'll want to leave this to marinate in the fridge for at least 24 hours.


Directions

In a shallow, lidded container, add the sesame oil, rice wine vinegar, tamari, and about 1/2 cup water. Mix well.

Mince the garlic and fresh ginger root and add to the marinade.

Drain the tofu and press for at least 30 minutes to remove more water. The drier it is, the more it will absorb the marinade.

Cut the block of tofu in 1" cubes, arrange in marinade, and refrigerate for 24-72 hours, turning the container upside down halfway through the marinade time.

Brush a baking sheet with the olive oil and arrange the cubes so that they're not touching. Bake 30 minutes @ 350, turn cubes over, and cook another 30 minutes.
