Ginger Fruit Slaw

Ingredients

1 8-oz. can crushed pineapple (juice pack)
5 cups finely shredded green and/or red cabbage
2 large carrots, shredded
1 11-oz. can mandarin orange sections (juice pack), drained
3/4 cup snipped dried apricots (optional)
1/4 cup honey
1 tablespoon lemon juice
1-1/2 teaspoons grated fresh ginger or 1/4 teaspoon ground ginger
Directions
1. Drain pineapple, reserving 1/4 cup of the juice; set aside.
2. In a large bowl, combine cabbage, carrots, orange sections, dried apricots (if desired), and pineapple. Cover and chill in the refrigerator for at least 1 hour or up to 8 hours.
3. For dressing, in a screw-top jar, combine reserved pineapple juice, honey, lemon juice, and ginger. Cover and shake well. Chill in the refrigerator for at least 1 hour or up to 8 hours.
4. To serve, shake dressing. Pour over cabbage mixture, tossing to coat. Makes 8 to 10 side-dish servings,
