Light and Fluffy Blueberry Muffins

Introduction

I modified a pancake recipe to make muffins! Banana instead of oil, lowers the fat. Yogurt and cottage cheese up the protein! I modified a pancake recipe to make muffins! Banana instead of oil, lowers the fat. Yogurt and cottage cheese up the protein!
Number of Servings: 12

Ingredients

    2 cups Bisquick HeartSmart
    1 egg, beaten
    1 container Oikos yogurt (I used Black Cherry)
    1 mashed banana
    1/2 cup lowfat cottage cheese
    1/2 cup 1% milk
    1 cup frozen blueberries

Tips

They could have been sweeter; maybe play with adding another banana, and lower the milk or cottage cheese. Play with it to make it your own!


Directions

Mash the banana, beat with egg, yogurt, milk and cottage cheese. Add the Bisquick and mix well. Fold in the blueberries.
Fill 12 muffin cups 2/3 full. Bake at 350 for 25 min. or until golden brown.
Fluffy and delicious!
