Don's Blueberry Pancakes

Introduction

These are my husband's specialty and a family favourite. I buy blueberries when they are in season and freeze them in 2-cup portions so that we can enjoy these pancakes all year long! These are my husband's specialty and a family favourite. I buy blueberries when they are in season and freeze them in 2-cup portions so that we can enjoy these pancakes all year long!
Number of Servings: 6

Ingredients

    1 egg
    2 Tbsp. canola oil
    1 cup 1% milk
    1 cup unbleached flour
    1 tsp. brown sugar
    2 tsp. baking soda
    dash of salt

    Mix above ingredients with a spoon - the texture will be too thin for pancake batter. Stir in:

    2/3 cup oatmeal
    2 cups fresh or frozen blueberries, unsweetened


Directions

Spoon batter onto griddle or skillet. Cook until bubbles form on the surface, then flip and cook on the other side.

Serving Size: Makes about 36 small pancakes.
