Don's Blueberry Pancakes

Introduction

These are my husband's specialty and a family favourite. I buy blueberries when they are in season and freeze them in 2-cup portions so that we can enjoy these pancakes all year long! Number of Servings: 6

Ingredients

    1 egg
    2 Tbsp. canola oil
    1 cup 1% milk
    1 cup unbleached flour
    1 tsp. brown sugar
    2 tsp. baking soda
    dash of salt

    Mix above ingredients with a spoon - the texture will be too thin for pancake batter. Stir in:

    2/3 cup oatmeal
    2 cups fresh or frozen blueberries, unsweetened


Tips


Directions

Spoon batter onto griddle or skillet. Cook until bubbles form on the surface, then flip and cook on the other side.

Serving Size: Makes about 36 small pancakes.
