Vegan Potato Leek Soup

Ingredients

    potatoes
    leeks
    water
    veg bullion cubes
    shallots
    olive oil
    soy milk
    white wine
    tarragon
    thyme

Directions

Saute shallots and leeks in olive oil. Add potatoes and saute. Add white wine and deglaze pan. Add water and bullion cubes, add herbsm and simmer 30 minutes. Blend, add soy milk. Season with salt, pepper.
