Introduction

A new twist on the grilled chicken salad. A new twist on the grilled chicken salad.
Number of Servings: 8

Ingredients

    What you need:
    (1) head of iceberg lettuce - chopped or shredded
    (1-1/2) C. baby spinach - whole leaf
    (1) fresh cucumber - sliced
    (1) fresh tomato - diced
    (3) portabella mushroom caps - cooked - cut in strips
    (1) boneless, skinless chicken breast - cubed
    (1) C. chopped walnuts
    (1/2) C. feta cheese - crumbled
    (1/4) C. dried, unsweetened cranberries

Tips

*Try adding clementine sections to add sweetness and omit the need for dressing! *Prepare on the weekend and separate into to-go containers for a healthy lunch option!


Directions

Prepare all ingredients as directed in ingredients list. Cook portabella mushrooms as desired and cut into strips (*note: nutritional value may vary depending on cooking method). Grill chicken breast and cut into small cubes. Combine all ingredients into large bowl. Salt and pepper to taste & add favorite dressing. Serve and enjoy!
