3betty's Shepherd's Pie

Ingredients

    3# lean ground beef
    2 T olive oil
    2 c diced onions
    2 c diced celery
    1 c green lentils, cooked
    3 T flour
    1 can diced plum tomatoes (28 oz liq /796 ml)

    6 medium potatoes (25 oz)
    5 c cauliflower - 1 medium head
    2/3 c sour cream, low fat -- start at 1/2, then judge it from there.
    3 oz grated cheddar cheese

Tips

I would have used more cheese, but I ran out. 250 mg of sodium per serving.


Directions

Preheat oven to 375F.

Saute onions and celery in olive oil, add beef and saute until cooked. Drain the meat. Cook potatoes and cauliflower together, then drain and mash. Add the sour cream to the potatoes, as well as some herbs. Cook the lentils.

Put the meat back into the fryer, sprinkle on the 3 T flour and mix. Add the can of tomatoes and the lentils, and season. Mix.

Spread the meat mixture into the bottom of an 11x14 lasagna pan. Scoop the mashed potatoes on top of it and spread. Sprinkle the cheese over it (press gently into the potato). Cook about 20-25 minutes. You want the cheese to melt, and the potatoes to just start to crisp.

Serving Size: fills an 11x14 lasagna pan, I divided to 18 portions
