Introduction

A low fat pumpkin spice muffin that is quick and easy to make. No oil or butter is used in this recipe. To jazz them up into cupcakes they can be topped with cream cheese frosting and toasted pecans or walnuts, but this recipe only calculates nutritional info for the muffin itself. Ingredients

    1 - Box of Duncan Hines Spice Cake
    1 - 15 oz. can of pure pumpkin puree
    1 - large egg
    1 tsp. ground cinnamon
    1/4 tsp. ground nutmeg
    1/4 tsp. ground ginger
    1/8 tsp. ground cloves

Tips

After they cool, they can be frosted with cream cheese frosting and toasted, chopped pecans or walnuts.


Directions

Preheat oven to 350 and add cupcake liners/papers to two regular size cupcake trays.

In a large bowl mix the cake mix, pumpkin, egg, and spices with beaters until fully blended. Add batter to cupcake trays. If you want level tops on the muffins/cupcakes, be sure to flatten the batter with a spoon or spatula because it will not level out while cooking.

Bake 18-21 minutes at 350 degrees.
