Stuffed Mushrooms

Ingredients

    16oz Mushrooms about 12 medium to large
    2 Tbs Creme fraiche
    2 Tbs mayo
    3 Tbs Panko Bread Crumbs
    2 Tbs Parmesan cheese
    1 Tbs Dried Herb Blend
    2 Tbs Balsamic Vinegar
    2-3 drops hot sauce optional

Directions

Remove stems from mushrooms; set caps aside.

Chop stems, reserving 1/3 cup (discard remaining stems or save for another use).

In a bowl, combine the bread crumbs, creme fraiche, Parmesan cheese, herbs, mayonnaise, vinegar, hot pepper sauce if desired and reserved mushroom stems; mix well.

Place mushroom caps on a baking sheet coated with cooking spray; stuff with crumb mixture.
Sprinkle tops with some additional bread crumbs

Broil 4-6 in. from the heat for 5-7 minutes or until lightly browned. Yield: 3 servings.
