Spinach with Cashews and Cumin

Ingredients

    1/2T extra virgin olive oil
    1/4 cup cashew pieces, roasted and unsalted
    1 tsp minced garlic
    2 c spinach
    1/2 tsp cumin seeds
    1 tsp lemon juice (5 ml)

Directions

Heat a large fry pan over medium-high heat. Add olive oil, then cashew pieces, garlic and cumin seeds. Cook until fragrant (1 minute).

Gradually add spinach, stir until wilted (up to 3 min). Stir in lemon juice. Salt and pepper if desired.

Serving Size: makes 1 dinner portion or 2 sides
