Ranch Fish

Introduction

Number of Servings: 2

Ingredients

    Cod fish fillets, two at 3.5 oz each
    2 tbsp light Ranch salad dressing
    1/2 c dry bread crumbs
    Tiniest sprinkle of dry Parmesan cheese
    Non-stick spray

Tips

The dressing and the cheese are somewhat salty and I would not add salt to this recipe.


Directions

Spray a small casserole dish with non-stick spray. Sprinkle 1/2 the bread crumbs in the dish. Place the fish fillets in one layer on top of crumbs. Spread the Ranch dressing on the fish. Sprinkle remaining crumbs on the dressing and use a fork to coat the crumbs by tossing them a little. Spread the mixture evenly over the fish. Sprinkle a tiny bit of dried Parmesan cheese on top. Do not cover. Place in microwave for 3 - 5 minutes, depending on how hot yours gets. Remove dish from microwave and let sit for a minute or two. Serves two.
