Turkey breast soup

Ingredients

    3 potatoes (10 oz)
    homemade turkey broth 2.5 c
    4 c spinach

    1 c green lentils
    1/2 c green split peas
    6 c homemade turkey broth

    2 c onions
    3 c celery
    1 T margarine
    1 T garlic

    1 turkey breast - 20 oz meat

Directions

The day before: cook turkey in crock pot with some onion and celery and spices. Cool when cooked, take meat off bone. Cook the bones and skin in the broth for about 4 hours. Strain, discard all the solids. Refrigerate. The next day, remove any fat from the broth.

In large soup pot, cook lentils and peas in 6 c turkey broth.

In saucepan, cook potatoes in 2.5 c broth, add spinach near the end. Cool, puree, add to big soup pot when the peas and lentils are cooked.

Saute in fry pan: marg, onions, celery. Add garlic near the end. When garlic browns, add to soup pot.

Rinse the kidney beans thoroughly, add to soup pot.

Serving Size: makes 33 scoops of 1/2 cup; 251 sodium, 2.7 fibre
