White Chicken Chili

Ingredients

1 lb ground chicken breast
1 tbsp Olive oil (to brown chicken meat)
1 Packet McCormick - White Chicken Chili Seasoning Mix
Mushrooms, fresh, 7 large
Garlic, 3 cloves
1 Green Peppers 1 pepper
1 Large Onion
1 large 32 oz can whole peeled tomatos (drained)
2 15oz cans of Great Northern Beans (3.5cups)
Add red pepper flakes (optional) for more flavor/spice
Salt/pepper as preferred
Great served over brown rice!
Tips
We added our own veggies. You can add whatever ones you'd prefer. I try to sneak in all of the veggies where we can. My husband and I will serve this over brown rice for a full meal. (rice is NOT included in nutrition info!)

DIRECTIONS
1. HEAT oil in large skillet on medium heat. Add chicken; cook and stir 3 to 5 minutes or until no longer pink.
2. STIR in all of your veggies then add seasoning mix, and beans. Crush the whole tomatos with your hands a bit to break them apart. Add to the rest of the mixture. Bring to boil. Cover. Reduce heat and simmer 10 minutes or until chicken is cooked through, stirring occasionally.
