Ingredients

    2 lb. 93% lean ground beef
    2 1/2 C chopped onion (use frozen for speed)
    2 red or green peppers, chopped
    2 1/2 oz. chili powder
    2 15 oz. cans black beans, drained
    2 15 oz. cans diced tomatoes, UNdrained
    2 10 oz. cans Rotel, UNdrained
    2 15 oz. cans tomato sauce
    2 C water

Tips

We like to ruin the low-calorie feature of this recipe by serving it over Fritos and topping it with shredded cheese and Greek yogurt.


Directions

Brown ground beef in large skillet over medium heat. Meanwhile, cook onions and peppers in a 5-quart dutch oven or stock pot. When vegetables are cooked, add chili powder and stir. Then add canned ingredients and stir. Boil 2 cups water in tea kettle; add & stir. Drain beef and add to chili. Simmer 10 minutes and serve.

Serving Size: Makes 20 1-cup servings.
