Blueberry Cobbler

Ingredients

1/2 C Sugar
1 Tbs cornstarch
4 C blueberries
1 tsp lemon juice
3 Tbs shortening
1 C Flour
1 Tbs Sugar
1.5 tsp Baking Powder
1/2 tsp Salt
1/2 C Milk (Skim)
Tips
Can be made with 4 C peaches instead of blueberries and adding 1/4 tsp ground cinnamon to first dry mixture. Nutritional information must be readjusted.
Directions
Heat oven to 400 degrees. Mix 1/2 C sugar and the cornstarch. Stir in blueberries and lemon juice. Cook, stirring constantly, until mixture thickens and boils. Boil and stir one minute. Pour into ungreased 2 quart casserole; keep blueberry mixture hot in oven. Cut shortening into flour, 1 Tbs sugar, the baking powder and salt until mixture resembles fine crumbs. Stir in milk. Drop dough by 6 spoonfuls onto hot blueberry mixture.
Bake until topping is golden brown, 25 to 30 minutes. Serve warm.
