French Onion Soup

Ingredients

    2 c. Beef broth
    2 c. vegetable broth
    2 c. water
    1/2 sweet onion, sliced thin
    1/2 yellow onion, sliced thin and separated into two piles
    1/2 white onion, sliced thin and separated into two piles
    1/4 c. marsala wine
    3 tbsp. worcestershire
    4-5 sprigs of fresh chives
    4-5 sprigs of fresh tarragon
    2-3 leaves of fresh sage
    4 pats butter
    1 tsp brown sugar
    4 slices provolone cheese
    8 crostini

Directions

In large saucepan combine broth, water, sweet onion, 1/2 of the yellow onion, 1/2 of the white onion, and the herbs. Heat to boiling then reduce to med-low.

Meanwhile, in a skillet, melt the butter. Toss in remaining onion slices and saute until tender. Add brown sugar and toss well. Add this onion mixture to soup in saucepan.

Continue simmering for 30 minutes or so. About 15 minutes before serving, add wine and worcestershire.

To serve, ladle soup into fouroven-proof bowls. Top with 2 crostini each and a slice of provolone. Place under broiler for 1-2 minutes until cheese is melted.
