Pumpkin Wheat Germ Muffins with Streusel Topping

Introduction

I took my favorite muffins, substituted Splenda in the muffin itself and added wheat germ to boost the protein. I used real sugar for the tops so that you don't feel deprived when you eat them. Ingredients

    MUFFIN MIX
    2-1/2 c. of all purpose flour
    1/2 c. of oats
    4 t. pumpkin pie spice
    2 t. baking soda
    1 t. baking powder
    1 t. salt
    1 can (15 oz.) of pumpkin puree
    1/2 c. Splenda Brown sugar blend
    1 c. Splenda granulated sugar substitute
    2/3 c. vegetable oil
    1/2 c. applesauce
    3/4 c. Egg Beaters egg substitute
    1 t. vanilla extract
    1/4 c. raisins (optional)

    STREUSEL TOPPING
    1/4 c. packed brown sugar
    2 T. butter, softened
    2 T. rolled oats
    2 T. all-purpose flour

Directions

350* for about 30 minutes. Spray Pam on your muffin pan or use cupcake liners. Mix the first six ingredients together and set aside. Mix the remaining wet ingredients together, then add the dry ingredients to this mixture. Spoon this into your muffin cups.
Next, make the streusel topping for your muffins.
Use a fork or a pastry cutter to combine the ingredients until it is crumbly. Sprinkle each muffin with the streusel topping.
