Bran Muffins

Ingredients

    2 cups all bran
    1 1/2 cup 1% milk
    1 1/4 cup flour
    1/4 cup sugar
    5 teaspoons baking powder
    1 teaspoon cinnamon
    1/4 teaspoon each: cloves, nutmeg, ginger, allspice
    1/4 cup unsweetened applesauce
    1 large egg
    1/2 cup raisins (or craisins)


Tips

Can use 1/4 cup Better n' Eggs for a lower fat recipe.

Directions

Combine cereal and milk in a medium size bowl. Set aside for 15 minutes. Combine the flour, sugar, baking powder, cinnamon and spices in another bowl. Mix well. Add eggs and applesauce to the milk mixture. Mix well. Add the flour mixture to the cereal mixture. Stir until just moistened. Fold in the raisins. Spray muffin tins well with not-stick spray. Do not use paper baking cups. Divide the batter evenly into 12 muffin cups. Bake at 350 degrees for 15 - 20 minutes, or until a toothpick inserted into the middle comes out clean. Let muffins cool for 5 minutes in the muffin tin before removing.
