Pumpkin Crunch

Introduction

Awesome autumn snack - light, crunchy, and just a bit tart. Awesome autumn snack - light, crunchy, and just a bit tart.
Number of Servings: 10

Ingredients

    1.5 cup pumpkin seeds
    1 tbsp canola oil
    2 tbsp maple syrup
    1/2 tsp ground cinnamon
    1/2 tsp ground nutmeg
    1/4 tsp sea salt
    1/4 tsp ground allspice
    1 cup dried cranberries

Directions

Heat over to 300 degrees.

Put pumpkin seeds and oil in a bowl, and stir until the seeds are coated. Spread evenly on a lightly oiled or lined baking sheet, and bake for 20 minutes.

Transfer the seeds back to a bowl (they might be hot, so be careful - and use something heat resistant!), and stir in the maple syrup, mixing until they are coated.

Mix the spices and salt in a separate, small bowl - sprinkle over the pumpkin seeds and stir to coat.

Spread them out again on the baking sheet, and bake for 15 minutes. Stir occasionally, and watch them! Pumpkin seeds are apt to burn at this stage.

Let cool completely, then mix with the cranberries and serve.

Serving Size: Makes ten 1/4 cup servings (roughly)
