Anything goes fruit-filled muffins

Number of Servings: 12


    2 cups white wheat flour
    1/2 tsp salt
    3 tsp baking powder
    1/2 cup natural sugar
    2 TBSP ground flaxseeds, mixed with 6 TBSP water
    1/4 cup oil
    3/4 cup sour non-dairy milk (mix 1 tsp vinegar in it to make it sour)
    1 1/2 cups fresh or frozen fruit (I used 1 cup chopped apples with 1/2 cup raisins)


More fruit combinations:
banana, chocolate chip
raspberry, blackberry
strawberry, apricot
pear, apple
ginger, apple, apricot


Mix all ingredients together, plop into greased or lined muffin tins, and bake at 350 for 35-45 minutes.

Serving Size: Makes 12 muffins
