Ingredients

    1 C egg substitute
    1 1/2 c unsweetened applesauce
    1 cup nonfat cottage cheese
    2 T dark molasses

    1 C soy flour (low fat if possible)
    1 C oatmeal, raw
    1/2 C oat bran
    2 t. baking powder
    1 T cinnamon
    2 t nutmeg
    2 t cloves
    1 C coarsely chopped walnuts, pecans or almonds
    1 C dark raisins
    5 T (1/3 C) dark chocolate chips (optional)
    1/2 t salt (optional)
    2 C shredded carrots (optional)

Tips

very adaptable. Dough is stiff, and bars are a little gummy, especially with carrots. Cottage cheese is to raise protein, but without it, and with a vegan egg substitute, this could be vegan.


Directions

Bake in 9x13 pan, at 350 for about 35 min
