Quinoa Pancakes

Number of Servings: 6

Ingredients

    1cup of Quinoa, cooked
    3/4 cup flour
    2 tsp baking powder
    1/2 tsp salt
    1tbsp butter, melted
    1 egg
    3tbsp egg white, liquid
    1/4 cup almond milk
    2tbsp pure maple syrup

Tips

Add wheat flour or gluten free flour to meet your dietary needs. Top with Greek yogurt and berries instead of syrup.


Directions

Cook Quinoa according to package directions and let cool. Mix dry ingredients in a large bowl including the quinoa. Mix wet ingredients in a medium bowl. Mix the wet into the dry until smooth. Careful not to over stir. Will look gritty with quinoa. Heat a skillet on med high or a griddle to 350. Drop large spoon fools on griddle. Turn when gets bubbly on top. Cook on other side. Transfer to plate when done.

Serving Size: Makes 6 3-4" cakes or 11-12 silver dollar cakes
