Salmon Patties

Number of Servings: 4

Ingredients

    1 can red (or pink)salmon, cleaned of skin and bones and separated.
    1 raw egg
    4 to 8 wheat crackers, depending on what you have on hand, crushed finely
    1 stalk celery, minced
    1 scallion, minced
    salt, pepper and garlic powder to taste
    1 Tablespoon olive oil
    1 Tablespoon Earth Balance Buttery Spread

Directions

Mix first 5 ingredients. Add salt, pepper and garlic powder to taste. Form 4 equal patties.
Heat/melt butter and olive oil together in a skillet at medium heat. Place patties in heated pan, brown on both sides and heat through.

Serving Size: Makes 4 patty's, approx 3.2 ozs each
