Ingredients

    Beef, eye of round, about 2 lbs
    Garlic, 1 clove
    Dijon Mustard, 1/8 cup
    Thyme, ground, 1 tsp
    Rosemary, dried, 1 tsp
    Canola Oil, .5 tbsp
    Horseradish, 1 tbsp
    Pepper, black, 1 tbsp
    1 more T dijon mustard

Tips

serve with veggies for a great meal


Directions

spread 1/8 cup dijon over beef. mix the rest of the ingredients except the oil together to make a rub then stir in the oil to the mixture. spread the mixture over the top and sides of roast. roast uncovered for about an hour and to an hour and a half for med doneness
