Number of Servings: 8

Ingredients

    1 pkg.McCormick Gourmet Creamy Parmesan & Sun-Dried Tomato Chicken Penne Seasoning Mix
    1/2 Tbsp extra virgin olive oil
    approx 1lb chicken breast, cut into thin slices
    1 can (28 oz.) petite diced tomatoes, partially drained
    1 cup evaporated skim milk
    1/2 cup grated Parmesan cheese

    Add pasta of your choice (not included in calorie count)

Tips

Can also decrease the amount of grated parmesan to further decrease fat & calories.


Directions

1. COOK pasta as directed on package. Drain well.

2. MEANWHILE, heat oil in large skillet on medium-high heat. Add chicken; cook and stir 5 minutes or until lightly browned. Add Seasoning Mix, tomatoes, milk and cheese. Bring to boil, stirring constantly until well blended, simmer 5 minutes or until thickening.

3. STIR in pasta; toss gently to coat.
