Chicken Vegatable Orzo Soup

Ingredients

    1 Rotisserie Chicken
    8 to 10 oz whole wheat orzo
    1 lb carrots, peeled and sliced
    2 cp Fresh Spinach
    32 oz container low sodium chicken broth
    Fresh parsley
    Bay leaf
    Thyme, basil, salt and pepper
    Freshly grated parmesan reggiano cheese

Tips

You may substitute any veggies you like:)


Directions

Take the chicken off the bones and cut into bite size pieces. Put the bones in large pot and add just enough water to cover. Add an onion and boil the broth down.. approx 30 mins. Strain. Add the broth, bay leaf, carrots and simmer for another 15 minutes. Add chicken, orzo, spinach and spices and simmer for another 10 minutes. Top with freshly grated parmesan cheese.

Serving Size: makes 16 to 20 1 cup servings
