1(6 1/2 ounce) cans chopped clams, well drained
1/2cup crushed saltine crackers
1tablespoons minced parsley
1 teaspoon grated onion
Mix clams, eggs, crushed crackers, parsley, and grated onion.
In pan in hot butter, spoon clam mixture into 4 mounds, gently flattening each with back of spoon.
Cook cakes until browned on both sides, about 3-5 minutes per side
Serving Size: makes 4 small cakes 2 per serving
