Melanie's Buffalo Chicken Salad

Ingredients

    Chicken Breast, no skin, 1.5 breast, bone and skin removed
    Romaine Lettuce (salad), 1 cup, shredded
    Cucumber (peeled), 1 large (8-1/4" long)
    *Peppers, sweet, red, fresh, 1 medium (approx 2-3/4" long, 2-1/2"
    Black Olives, 10 jumbo
    Kraft Ranch Salad Dressing, 8 tbsp *Progresso Bread Crumbs - Italian Style, .5 cup
    Hot Pepper Sauce, 1/2 cup
    I Can't Believe It's Not Butter, Light Spread (Soft), 1 Tbsp, 6 serving

Directions

3 servings

Chop chicken into small chunks
Roll each in bread crumbs
Bake on a nonstick pan for 20-30 minues turning them once, until they are cooked and crisp (sometimes broiler helps w/that)
Chop up ingredients for salad and toss together
melt butter and combined with Franks hot sauce (1/2cup).
Once chicken is done, toss in the franks/butter mixture and top the salad with the chicken pieces.
