Baked Potato Soup

Ingredients

    4-6 small russet potatoes
    1 onion
    1/2 c celery
    1 can chicken broth
    1 1/2 c milk
    1 clove garlic
    1/3 c bacon pieces
    1 c sour cream
    2/3 cup cheese (low fat)

Directions

Bake potatoes in oven for 45-1 hr. Scoop insides into a pot, add broth and wisk until smooth, or use a blender. In a pan, heat olive oil and margarine or butter. Slice onion and add to pan. cook on med-low heat for 20 min until onion is caramelized. Add celery and garlic and cook until soft. Add to soup mixture. Add milk and simmer 10 min. Last, add sour cream. Top each bowl with 2 T cheese and 1 T bacon bits.

Serves 6.
