Cajun Lemon Salmon

Ingredients

    3 oz salmon filet
    lemon wedges
    2 tbsp cajun seasoning

    2 medium red potatos

    1/2 cup brown rice

Directions

1. Start cooking quick cook rice (20 minutes)

2. Cut red potatos into bite size pieces and put into medium ziploc or glad steam bags. Add 1/2 tbsp cajun seasoning and juice from 1 lemon wedge. Cook according to time on bag (about 5 minutes

3. Unzip bag and put potatoes in covered dish to keep warm.

4. Rub salmon filet with remaining seasoning and put in medium steam bag, add remaing juice from lemon wedges. Cook according to time on bag (about 3 minutes)

5. Place fish on plate with potatos and cooked rice and enjoy

I like to use the ziploc zip n steam bags because they are so easy and quick to use and there is no mess to clean up. If you use one bag for two different foods make sure you do the veggies first and then the meat to avoid cross contamination. Apparently even though you're steaming the food in the microwave it keeps all of its nutrients because of the design of the bag and because the nutrients aren't being lost in boiling water or a frying pan.

  • Marinated 2 4 oz. salmon fillets with 1 Tbls. olive oil, 2 tsp. spice, & 2 tsp. lemon juice & grilled. Steamed potatoes on stove, then dressed with 1 tsp. spice, 1 tsp. lemon juice & 2 tsp. olive oil. Eliminated rice, too much starch. Loved lemon & Cajun together, but changed recipe so only 3 stars - 5/10/10
