IntroductionSweetened with Honey Sweetened with Honey
1 2/3 cups whole wheat pastry flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
3 medium ripe bananas
1/3 cup honey
2 TBSP sour cream
1/2 cup vegetable oil
Mash the bananas in a small bowl. In a medium bowl, mix together the whole wheat flour, baking soda, cinnamon and salt.
In a third bowl, using a mixer, beat together eggs and honey for 10 minutes (mixture will grow in volume).
Mix in oil, bananas and sour cream. Gently stir in flour, but don't overmix.
Spoon into loaf pan that has been greased with cooking spray.
Bake for 60 minutes, or until a toothpick inserted in the middle comes out clean. Cool for 15 minutes before removing from pan.
Serving Size: Makes one loaf of bread - 10 slices
