1/2 cup light soy milk
3 whole cloves
3tsp black tea
1/2 cinnamon stick
3 cardamom pods
1/2tsp fresh ginger
1/2 cup water
1.5 cups heavy cream
2tsp powdered gelatin
1/4 cup sugar
1tsp vanilla extract
Strain tea and reserve all liquid.
In a pot add cream and sprinkle gelatin on top. Let sit ~7 minutes, then turn on heat and whisk mixture until gelatin is disolved while bringing liquid to a simmer. While it heats stir in sugar and tea. Once the liquid begins to simmer remove from heat.
Strain through a mesh strainer to remove any congealed proteins, etc., and stir in vanilla.
Portion into 5 custard cups, demitasses, etc. Cover with plastic wrap and store in refrigerator to set up, about 4 hours.
