.5 lb pork tenderlion,sliced thin strps .25 c sliced onion 1-2 cloves garlic,minced 1T minced ginger 2 t olive oil 4 c frozen stir fry mixed vegetables 1 c beef broth .25 c soy sauce less sodium 4t cornstarch
Stir fry pork and onion until pork is lightly browned. Add in garlic and ginger sir fry quickly 1 min. Stir in frozen vegetable and cook 4-5 minutes. Stir in 3/4c broth and soy sauce. Reduce heat, simmer 4-5 minutes. Combine remaining 1-4c broth with cornstarch, stir in and cook 2-3 minutes until slightly thickened. Serve-can be served over rice if desired, however rice not calculated into nutritional values.
