1 lb black beans
1 tbsp vegetable oil
1/2 lb sweet italian sausage, casings removed, crumbled
1 large onion, chopped
4 cloves garlic, chopped
4 cups reduced-sodium vegetable broth
1 tsp chili powder
1 tsp dried oregano
1 tsp cumin
1 sweet red pepper, cored, seeded and chopped
chopped cilantro, avocado, tomato and sweet red pepper for garnish (optional) not added into calorie count.
* heat oil in large pot over medium-high heat. Add sausage and cook 5 minutes, stirring occasionally. Add onion and garlic: cook 5 minutes, stirring occasionally.
* stir in broth, 2 cups water, soaked beans, chili powder, oregano and cumin. Simmer, covered 60 minutes or until beans are tender: add red pepper during last few minutes of cooking.
* remove 1 cup of the mixture to a blender and puree; return to pot.
