Introduction

This is a nice quick assembly recipe for a lunch dish that packs a good amount of protein and healthy fats and is low on carbs but high in flavor. This is a nice quick assembly recipe for a lunch dish that packs a good amount of protein and healthy fats and is low on carbs but high in flavor.
Number of Servings: 1

Ingredients

    1 - 5oz can of chunk light tuna, drained
    1tbsp - olive oil (seasoned dipping oil make this extra delicious)
    1/2tbsp - pesto paste
    1 green olive, diced
    1 tsp - capers, drained
    1 clove of pickled garlic, sliced
    1 sundried tomato, chopped
    salt & pepper to taste



Tips

You can skip any ingredients you don't have or don't like which is what makes this recipe so versatile. It can be eaten plain or on whole grain bread or crackers or part of a bigger salad.


Directions

Just mix the ingredients together in a bowl. No cooking required - you can keep this in the refrigerator for a couple hours to let the flavors blend together.
